We cannot believe we are in the last quarter of 2017! Time flies when you are having fun, and we have been busy with the opening of Q.ulinary Essentials Singapore and Ho Chi Minh City as well as Q.itchen Factory. It’s been a great time for us, knowing that this is also fulfilling the personal dream of our founder, Mrs Jacqueline Quek, to own her own restaurant! Q.ulinary Essentials, a dedicated store for the professional chefs and bartenders boasting a focused collection of equipment for F&B professionals officially opened its doors on 25 September in Singapore! Located centrally at Tan Boon Liat building, we celebrated the best way we could – with a 30% storewide discount for all our friends from the industry. A big thank you to the F&B trade, who turned up in full force to show their support – familiar faces spotted included Chef Stephan Istel and Nicolas Schwarz from Bar-Roque Bar & Grill, and the lovely Angela May from Ange Café. We’ll be stocking up with new products and ranges, so stay tuned for more.

In giving back to society, the founders of Merci decided that part of the profits would be contributed to an endowment fund used to finance education and development projects in southwestern Madagascar.

– ACE TAN AND DAVID LEE, RESTAURANT ARDS
Ace Tan and David Lee, Chef-Owners, who met at Pollen, joined hands to pursue their dream to open a restaurant that Asia would be proud to call their own. Restaurant Ards is set to be the next talking point in the industry, with their strong brand of cuisine.
How would you introduce the cuisine at Restaurant Ards?
[Ace] What we wanted to create was a cuisine that was original and would belong to Ards and only Ards. We didn’t want to be typecasted, or to follow trends. Which is why for us the cuisine at Ards is not a literal translation of a particular type of Asian food. We drew inspirations from our roots, childhood memories, travels and dining experiences and created a brand new style of food.
Your dishes are beautiful…
One of the reasons why we called the restaurant “Ards” is that we believe dining is a form of art and it should be a multi-sensory experience for the diners the minute they step into the restaurant. We aim to fulfil all senses, from the sounds to the sights, from the taste to the touch. Everything must be impeccable, and the right choice of tableware is important in telling our story behind the concept.
The Soy Bean Skewer, for example, is served on Pordamsa’s Porcelain Cup & Grill. Soy, to us, is an important but underrated ingredient used ubiquitously in Asia, so we’ve paid a nod to this ingredient by making our own tofu with soymilk, and it’s topped with soy reduction, caramel and a black moss crisp. We serve it on charcoal on the grill, and just before serving to the guest, a drop of sesame oil is dropped on the grill. The diners get to indulge in that natural fragrance of sesame oil, before they taste the food.
Too many chefs spoil the broth – true or false.
It’s both true and false. The restaurant business is all about teamwork. The menu at Ards is a collaborative effort; every dish is discussed and developed between the two of us, and we combine our two culinary styles together. We are two very different people, and it works because we complement one another that way.
If your kitchen is on fire, what is one thing you would save?
[Ace] I will rescue Pordamsa Storm (used in Ards’ Touch of Asia dish) and I’ll have to rescue all of them as each piece is unique and one of a kind!
[David] The steamer from JIA Inc. (used in the Fragrance Osmanthus dish)
If I am not a chef…
[Ace] I will still likely be in advertising.
[David] Not possible. Being a chef is the only thing I ever wanted to do.
