Not at all! It was such a sweet surprise to us and a very emotional moment for my team, my family and the people who have believed in Odette since day 1.

Just trying to improve Odette every day. The beauty of our job is that we can learn, see, smell and taste something new all the time.

Your favourite restaurants in Singapore are…
Brasserie Gavroche, Bar-Roque Grill, Lukes, Naked Fin, Les Amis, Cure… There are so many great dining options, but these are my favourites. Though I’d admit, there hasn’t been much time to dine out lately!
Tell us about your upcoming restaurant in Hong Kong – Louise. What can we expect?
Casual French dining where guests will discover my own spin on bistronomy. There’s more to come once the restaurant opens in June!
Your career has taken you from France to the French West Indies, to Polynesia, London and now Singapore and Hong Kong. Where else do you hope to venture with your culinary skills?
